Natural casings from horses are used in the food industry for larger calibers and stable sausage casings. Standardly available salted in 9-meter bundles, alternatively also available dried and sewn as piece goods. Due to their robustness, they are ideally suited for raw sausages and cooked salami. Their strength provides stability even during long ripening processes. Horse casings are easily permeable to smoke aromas, making them particularly suitable for smoked products. Their thick structure ensures even ripening and gives the products a traditional, high-quality appearance.
